3 Grain Bran Bread
Few things in the world of food can rival the simple deliciousness of freshly baked homemade bread. My favs are the ones with a light crust but a soft inside (swoons while thinking of fresh bread). I was also eager to create a vegan bread option, something power packed with fiber and nutrients but not as dense and harsh in taste as most whole grain whole wheat breads. So I did and it was fabulous and I may have eaten half a loaf myself but that's another story okay. Allow me to come through with the bread recipe and happy baking.
3 and 2/8 cups Sifted All Purpose Flour
2 tbsp Brown Sugar
2 tbsp Vegetable Oil
3/4 cups Warm Water
1 packet Instant Yeast (11 g)
1/2 cup Rolled Oats
1/2 cup Wheat Bran
1/3 cup Flax Seeds
1/8 cup Chia Seeds
1 tbsp Poppy Seeds
1 tsp Salt
3/4 cups Rice Milk
1/4 tsp Sesame Seeds
1/4 tsp Poppy Seeds
1 tbsp Rolled Oats
2 tbsp Rice Milk (to brush on top)
●To a large mixing bowl add warm water, sugar, oil and yeast and whisk well. Set aside and for 10 mins to allow yeast to bloom. (yeast will become frothy when fully bloomed)
●To a medium sized bowl add flour, bran, oats, flax seed, chia, poppy seed and salt and mix well.
●Gradually mix flour into yeast while slowly adding milk and binding with hands.
●Form a ball with the dough and grease the base of the bowl placing dough back in to sit and rise for 1 hour.
●Preheat oven at 375 F.
●Grease and flour bread pan and remove dough from bowl and form to fit pan.
●Brush dough with remaining rice milk and top with oats, poppy an sesame seeds.
●Place in Oven and bake for 30-35 mins or until the top begins to look slightly golden brown.
Remove from oven and place on a wire rack to cool, or if you are like me slice that bad boy up hot and slather on some vegan butter. Most importantly do enjoy.
