Aloo Pies (Potato Pies)

Golden fried yumminess, soft on the outside with a little crisp around the edges but the added surprise when you bite into one of these delicacies is the seasoned potato filling or as we say in Trinbago (aloo) topped of with some spicy tamarind sauce or a chutney of your choosing.....my my my simple but delicious. Aloo pies are just one of the many many benefits of my beautiful cosmopolitan nation.

Aloo is the traditional East Indian word for Potatoes and these pies are just one of the contributions that said culture has had on cuisine in this country. Here's my recipe for them I sure hope you have fun putting them together.

INGREDIENTS

Filling 5 medium Potatoes 4 cloves garlic 1 tsp green seasoning 1 tsp shadow beni (bandania) 1 pimento 1 tsp geera powder 1 tsp anchar masala 1/2 tsp black pepper 1/2 tsp salt (or to taste) Pepper to taste

Method

●Peel, cube and wash potatoes, crush garlic and add both to a pot of boiling water till soft. ●Drain potatoes and add to dish. ●Add all the other ingredients before crushing potatoes and then begin to crush potatoes until all the ingredients are properly incorporated. ●Set aside. Dough 3 cups flour 1/2 salt 2 tbps sugar 2 tsp yeast 2 tsp baking powder 1 cup warm water 1 1/2 vegetable oil for frying ●Add flour to bowl, add salt, sugar, yeast, baking powder, incorporate. ●Add warm water gradually until flour is soft but firm. ●Roll into ball and cover for 10 mins. ●Uncover flour dust surface you're rolling dough onto and divide into 10 smaller balls. ●Using bilnah (rolling pin) flatten dough until approximately 1/4 inch thickness or as flat as possible and circular in shape. ●Add filling to one half of dough and spread out on that half. Ensure the edges where the filling is spread are free to seal. ●Cover your filing by folding the other half of the dough over the filling and use the edges of a fork pressing into both parts of the edges of the folded dough. Turn pie over and repeat. ●Place pie into heated oil and cook till golden brown.
