Apple and Cabbage Coleslaw (Mayo Dressing)

The term "coleslaw" arose in the 18th century as an anglicisation of the Dutch term "koolsla" ("kool" in Dutch sounds like "cole") meaning "cabbage salad". The "cole" part of the word comes from the Latin colis, meaning "cabbage". In Trinidad and Tobago, this is usually a side enjoyed with our one pot meal Pelau or other rice based one pot meals but not limited to these. Of course, true to form, I like adding my twists, hence the the tart yet sweet apple slices incorporated. It is (apple) a wonderful accompaniment to this beautiful side. Here's my recipe, hope you enjoy.
Ingredients
1 cup chopped or shredded White Cabbage
1/2 cup chopped or shredded Red Cabbage
1/4 cup chopped Celery Stalk
2 cloves grated Garlic
1 large Red Apple sliced
1 small Carrot julienne
2 tbsp Granulated Sugar
5 tbsp Mayo
1 tsp Mustard Powder
1/4 tsp Paprika
2 tbsp Water
Salt and Black Pepper to taste
