Baked Mac & Cheese (PIE)

Ah yes Pie, another beautiful Sunday lunch staple. While the one most popular version of this is made with Macaroni really almost any type of pasta will do. There are many different ways and variations of this delightful cheesy pasta dish and every cook I know has their own yummy version with little tips and tricks on how to create the flavors and textures they desire. Here's my most recent cheese-a-licious (yes that's a word lol) version.


2 1/2 Cups Mostaccioli Pasta (it any pasta of your choice) 1 Cup Milk

2 Cups Pepper Jack and Jalapeno Cheese

1 Cup Cheddar Cheese

1 Tbsp Butter/Margarine

1 Tbsp Flour

1 Tsp Garlic (grated)

1/3 Cup Panko Breadcrumbs

2 Tsps Green Seasoning

1 Tsp Paprika

1/2 Black Pepper

1/2 Tsp Chilli Flakes

1/2 Tsp Dried Parsley

1 Tbsp Vegetable Oil


●Place Pasta in a pot of boiling salted water to cook for 15 mins or till Pasta is cooked. Drain and set aside.

●To a large saucepan on medium heat add butter and melt, the add flour and whisk quickly to incorporate, add milk and whisk as well.

●When milk begins to bubble at the edges stir in salt, garlic, green seasoning, paprika, black pepper and cheddar cheese once the sauce has thickened turn off heat and add pasta.

●Stir in 1 1/2 cups of pepper jack into mixture

●Grease a shallow baking dish with oil and place the pasta in the dish top of pasta with remaining 1/2 cup of cheese, panko breadcrumbs and parsley and chili flakes in that exact order.

●Place pasta in preheated oven at 250 degrees to bake for 20 min or until the top of the dish is golden brown in color.

You can set dish aside to cool a bit before you dig in and serve in perfect slices of you can do what i do and dig in immediately while the cheese is bubbly gooey and hot to the bite lol.
