Bhaji and Pumpkin Rice (Cook Up)


Bhaji rice is undoubtedly one of my fav things to eat. It's one of those meals I remember getting home from school and realizing my mother cooked and becoming ecstatic. A comfort foodie type dish most likely served with curried meats sometimes called Bhaji Rice Cookup. It can be made with coconut milk and salted meats but I choose not to go that route this time. Every home has a different way of preparing this delicious meal and I am excited to share my recipe with you. Here's my recipe, Enjoy.





INGREDIENTS



3 cups Brown Whole Grain Rice


1 small bundle Dasheen Bush Leaves chopped


2 cups Pumpkin cubed


2 Pimentos


3 cloves Garlic crushed and chopped


3 tbsp Olive Oil


1/2 cup Water


1/2 tsp Black Pepper


Salt to taste



METHOD




●Place saucepan on high heat and add 5 cups water and bring to a boil.


●Place rice in a fine mesh sieve and rinse until water runs clear, add rice to boil water and cook for 30 mins or until rice softens with a slight bite.


●Drain rice using a colander and set aside.


●To a large saucepan or frying pan on medium heat add olive oil, allow oil to heat up slightly and add garlic and pimentos and toss for approximately 30 secs before adding dasheen bush.


●Allow dasheen to cook and reduce slightly in size for a 3 mins stirring gradually before adding your water, lowering heat and covering pan.


●Allow bush to cook for 10min or until bush softens, add pumpkin chunks and cook for 5 mins covered.


●Once pumpkin is cooked through you then use a fork to fluff and pull apart your rice before adding it to your pan and adding salt and black pepper before mixing and ensuring rice and veges are well incorporated.

Note: try to avoid over mixing rice and turning it to mush.


●Remove rice from heat and serve with fav meat and veges but most importantly do enjoy.
