Blackened Cajun Chicken

Spicy food and I....we covered this already ok. This recipe is a festival of spices and can be served with almost anything. It definitely isn't too hot to handle each ingredient just adds extra layers of flavor all cradling the chicken in yumminess, creating great color and textures while adding this great big flavor kick. So from me to you here's my recipe and I do hope you enjoy.

Ingredients

2 large Chicken Breasts

2 tbps Green Seasoning

1 1/2 tsp Salt

1 tbsp Paprika

1 tsp Ground Cumin

1 tsp Garlic Powder

1 tsp Dry Mustard

1/4 tsp Black Pepper

1/4 tsp Cayenne Pepper

2 tbsp Olive Oil

Method

●Clean, De-Bone, Slice breasts into for pieces and wash.


●Pat dry and place in a dry bowl and Green Seasoning.


●In a smaller bowl mix all the dry spices and then massage spices into chicken and set aside for 15-30 mins.


●Place oil in a cast iron skillet and when oil is medium range heat place chicken breasts in turning once or twice to ensure that its evenly cooked.


●Cook Breast for 20-30 mins or until the outer coating with the spice is has Darkened giving the chicken a grilled appearance.


●Remove and serve hot with the dish if your choice. I served mine here with Tomato and Onion Rice and Sweet Corn.
