Cauliflower "Fried Rice"

Cauliflower Fried Rice plated with Mild Spice Steamed Drumsticks and Sweet Corn Salsa
This plate of vegetable goodness is neither rice nor fried so I use the terms loosely. What it is though, is my lovely low-carb substitute for those of us who are mindful of what our body needs and taste buds crave to be happy. There's no dieting over here, just a simple balance of the somewhat unhealthy and the extremely healthy, but we're always happy because it's all so good. I'm sharing with you this beautiful recipe and it is my hope as always that you enjoy it.
1.5 lb head of Cauliflower chopped
1 medium carrot Shredded
2 stalks chopped Celery
2 chopped Pimento
2 tbps Water
3 cloves Garlic crushed and chopped
2 tsp ChowMein or Fried Rice Seasoning
1/4 cup Water
Pinch salt to taste.
●After washing and chopping you cauliflower place it in your food processor and pulse on a low speed until you get desired grainy texture then set aside.
●Add the 2 tbsps water to a hot wok or frying pan and let it heat for sometime until it begins to bubble. Toss in garlic, pimento and celery and stir until it becomes fragrant.
●Add Cauliflower and Carrots and toss a few times, the add add seasonings and salt and incorporate.
●Add 1/4 cup water and lower heat a bit cover the pot and allow to sit and steam for 7-10 mins.
● Remove from the heat and serve with desired meats and salads or sauces but most importantly enjoy.
