Chicken in Plum Sauce

Traditionally, this isn't the way you prepare Chicken in Plum Sauce. However, ever so often, I just enjoy doing away with the norm and trying a slightly different method. When you first bite into your chicken you are greeted by the sweetness of the plum sauce with a little spice from the pepper flakes. They create a perfect balance. As you indulge further you're met with perfectly seasoned bites of meat, still juicy and very tender. Simple flavors that come together perfectly bringing you a delicious main dish. I do hope you enjoy this recipe.

Ingredients

6 Chicken Leg and Thigh quarters 3 Tbsp Green Seasoning 1/4 tsp Black Pepper 1/2 tsp Salt 1/4 tsp dried Cilantro 1/4 tsp Red Pepper Flakes Plum Sauce (260 g)

Method

●Wash and clean chicken quarters with lime or vinegar water, pat dry and place in a bowl. Rub thoroughly with green seasoning, salt and black pepper. Set aside to marinate for 20 - 30 mins. ●Using the back of a spoon or your fingers paste chicken with plum sauce on both sides and place on baking tray skin side up. Sprinkle with red pepper flakes and cilantro and bake @ 350° for 20 - 30 mins till chicken is cooked through and sticky. Serve hot but most importantly enjoy.
