What it means to be a full time working mother with a business on the side is that I am always tired and always busy. It also means I'm always faced with the challenge of figuring out "what do I cook today?" Let's factor in the reality that I am very much not a fan of a lot of fast foods and what we have is a daily struggle. Here's one of my ways of keeping it fun, healthy, delicious and fast. Chicken & Peppers for the win. I threw this meal together in less than an hours time and was quite satisfied with it. I'm sure you will be too. What's an even more noteworthy fact is that I used my new Poultry Dry Rub to season the Chicken which only made this meal even better. Here's my recipe I hope you enjoy.
INGREDIENTS
med-large boneless Chicken breasts
(Cut into strips)
3 large Bell peppers sliced
(assorted colors)
4 tbsp Teri's Poultry Dry Rub
(or any seasoning of choice)
1 large Onion sliced
3 cloves Garlic chopped
3 tbsp Olive Oil
1/2 cup Water
(Feel free to use Vege or Chicken Broth if you like)
Salt and Pepper to taste
METHOD
●Add your seasoning to your chicken and mix well. (You can set aside to marinate or you can cook it at once)
●Place med - large skillet on med high heat and add olive oil.
●Once oil is hot add garlic and onions and saute for 10 secs.
●Asd chicken and mix well, allow to cook for 5 mins before adding your peppers.
●Mix peppers in well and cook for 2-3 mins before you add you liquid.
●Cook for 12-15 mins before further Seasoning with salt and pepper.
●Once liquid has reduced by 1/2 remove from heat and serve hot.
I served this on bed of yellow rice but really you can toss some pasta in this or fill a wrap with it because it's simple and quick and most importantly delicious.
