Chocolate Banana Bread

I love me some Banana Bread. As a light snack or a part of breakfast it really doesn't matter, I'll have it both ways. There are many ways to spruce up your banana bread. In fact recently, I made both pumpkin and chocolate banana bread and both were equally as delicious. You can throw in some nuts, berries or some other mashed or pureed fruit and it really only enhances the delicious taste. Okay, without further ado, here's my recipe and I really do hope you enjoy.

● 2 to 3 very ripe bananas mashed

●1 1/2 cups of all-purpose flour

●1/3 cup melted Butter or Margarine

●1/2 cup Milk

●1/4 cup chocolate powder

●1 teaspoon baking soda

●1/2 tsp grated nutmeg

●3/4 cup sugar

●1 large egg, beaten

●1 teaspoon vanilla extract

●Pinch of salt

●Preheat your oven at 375 degrees.

●Grease and flour a 4-8 loaf pan and set aside.

●In a mixing bowl add mashed bananas, stir in the melted butter and mix until smooth.

●Add beaten egg, sugar, nutmeg, vanilla essence and baking soda and salt, stir well.

●Add chocolate powder to milk and mix well to ensure there are no lumps.

●Then gradually add flour and milk to banana mixture stirring well to avoid lumps.

●Once all your ingredients are incorporated pour them into your loaf pan place into the oven to bake for apprx 45 mins or until tester inserted into center of bread comes out clean.

●Once bread is ready place on a wire rack to cool completely before serving.

Strangely enough I choose to serve this bread with ice cream as a dessert and it was a certified hit. However you choose to have you bread I do hope you enjoy.

Thanks again for joining me for another session of Food Therapy. See you soon
