COCONUT AND STRAWBERRY ICE CREAM (dairy free)

For quite sometime now I have been coming across Nature's Charm Coconut Condensed Milk and Whipping Cream ads and searching desperately for a distributor in Trinidad. Luck was on my side quite recently and I happened upon a stash of these lovelies. My first thought after striking gold was ICE CREAMMM! While I have mentioned my dairy allergy in several of my recipes, I must admit it has made it quite difficult for me to enjoy several of my favorite foods and beverages and I absolutely adore ice cream. Needless to say, this discovery solved my dilemma in an amazingly simple way. Now that I have your attention, here's my recipe and I do hope you enjoy.

INGREDIENTS
1 tin chilled Whipping Cream 400ml
1 tin chilled Condensed Milk 320g
6-7 chopped Strawberries
(feel free to use whatever filling fruit, cookies etc the quantity can also be
increased as desired)

METHOD
●Add chilled whipping cream and condensed milk to a large mixing bowl and using a hand mixer or stand mixer whip on a medium speed for approximately 5 mins till properly incorporated and smooth.
●Mix in chopped strawberries and place into a freezer friendly dish, cover and freeze overnight or until firm.
●Scoop, top or drizzle with whatever your little heart desires but most importantly enjoy.
