Coconut Bran Bake

Coconut Bake, also fondly referred to as "pot bake" because it was often times made in a pot on the stove as opposed to a baking dish in the oven, is another amazing local treat. Imagine, fresh out of the oven coconut bake with some butter or cheese in the middle that immediately begins to melt because the bake is so hot , paired with a nice hot cup of chocolate (tea) milk.Granted I added the bran to this recipe to make it a bit healthier, you can replace the bran with more flour and make it the "traditional" way. Listen, if you have never had it you don't know what you are missing, trust me. I have your backs though, so here's my recipe and I do hope enjoy.


4 2/3 cups All Purpose Flour plus a bit more for dusting

1/3 cup Wheat Bran

1 1/2 cup Coconut Flesh (finely grated or blended)

1 1/2 warm Coconut Milk

2 tbsp Brown Sugar

1 packet 11 g Instant Yeast

4 tbsp Margarine

1 tsp Cinnamon powder

1/2 tsp Salt


●To large mixing bowl add yeast, sugar and warm coconut milk. Set aside for 10 plus mins until yeast has bloomed.

●Into flour mixture rub in 2 tbsp of the margarine with fingers and ensure it is well incorporated.

●Add cinnamon, wheat bran and salt to flour and mix well.

●Add dry ingredients to yeast and milk mixture and bring together using hands.

●Knead dough and knead the flour well with hands for approximately 2 mins until dough comes together but is still soft.

● Form a ball with dough and place in bowl dusted with flour. Cover dough with a damp towel and let rise for 30 mins to an hour.

●Cut dough in half and roll out using rolling pin to approximately 1 to 1/2 inches thick. Grease and dust two round baking dishes and place dough in.

●Use fork and lightly prick the entire surface of the dough the set aside to rise for a further 15 mins while you preheat the oven at 250 F

●Place dough in oven and bake for 15 mins, remove from oven and brush the top with the remaining margarine then replace in oven for 5 more mins.

●Remove from oven slice as desired and enjoyyyyyyyyy.
