Crab Dumplings in Coconut Curry Sauce

So I love crab. Next to shrimp, it is quite possibly my favorite seafood, especially curried with dumplings which is Tobago's (our sister isles) signature dish. I figured "why not do crab and dumplings with a twist using pot stickers and a delectable creamy coconut curry sauce". This recipe is really simple and I made my wrappers from scratch, but you can buy them which makes this an even quicker and easier fix. Here's my recipe I do hope you enjoy.

2 1/2 lbs. Crab Meat

1/4 cup Panko Breadcrumbs

1/4 cup chopped Sweet Pepper

1 small Onion chopped

2 small Pimento chopped

2 tbsp. Green Seasoning

1 tbsp. Curry Powder

1/4 tsp Black Pepper

2 tbsp. Vegetable Oil

1/2 tsp Salt

3 cloves Garlic

1/4 cup Vege Broth or Water

2 tbsp. Water

1 pc Hot Pepper (to taste)

3 tbsp. Vegetable Oil

20 Dumpling Wrappers

2 tbsp. Curry Powder

1/2 cup Coconut Milk

1/3 cup Water

1/8 tsp Chili flakes

Salt to taste

Green onions to garnish

●Add your crab meat to a mixing bowl then add bread crumbs, green seasoning, curry powder, black pepper and salt. Mix and set aside.

●To a sauce pan or frying pan add vege oil on medium heat, when oil is hot add garlic, pimento, onions and sweet peppers and sauté until onion becomes translucent.

●Add crab meat and mix well then add broth or water and cook on a low heat for 5-7 mins.

●Allow filling to cool somewhat before you begin stuffing and folding dumplings, use cold water on the edges to seal edges. (Set aside pan that the crab was in, we will be using that later.)

●Use another saucepan or frying pan on medium heat add 3 tbsp. oil and allow to heat up gradually. Place dumplings in pan setting each dumpling on its base and allow to fry until the bottom of each is golden brown.

●Add two tbsp. water to pan with dumplings and quickly cover and allow dumplings to steam for approximately 5 min before removing from heat.

●Place saucepan that crab meat was cooked in on a low heat and add water and using a wooden spoon drag along the base and sides of the pan removing the bits of crab met stuck in pan and whisk in curry powder.

●Raise heat to medium and add coconut milk along with chili flakes and stir well, add salt.

●Bring liquid to a boil and allow to cook for 5-7 mins and remove from heat.

●Place Dumplings in a bowl and pour some of the curry sauce over it, garnish with green onion and serve.
