Curried Corn

I never had or heard of curried corn until a few years ago when a girlfriend of mine suggested I should try it. Being the corn and curry lover that I am, it was a no brainer. Truly though I believe my people will curry almost anything (I said almost everything and not everything okay! lol) After my very first try I was hooked. I mean with the well married curry spices, creamy coconut milk and sweet corn this dish is simply divine. Sure, you don't have to take my word for it. Instead how about you the recipe yourself and see. Hope you enjoy.


4 ears Corn (chop each ear into 3-4 slices) 1 cup Coconut Milk 2 tbsp Curry Powder

1 cup Water 4 tbsp Olive or Vegetable Oil 4 leaves Chandon Beni chopped 2 cloves Garlic crushed then chopped 1 Pimento chopped 1 piece Hot Pepper to taste

1/4 Red Pepper Flakes (optional) Salt to taste


●To a medium saucepan on medium heat add oil and allow to get hot.

●Add curry powder and stir into oil for a few secs, you then add the garlic, pimento, pepper and half of the chadon beni.

Add coconut milk and cup water to cover corn, stir cover and raise heat to high and allow to simmer and cook for 10-12 mins before uncovering.

Add salt and allow to continue to cook uncovered until liquid is reduced by half its original amount.

Once liquid is reduced add remaining chadon beni and red pepper flakes, remove from heat and serve.

What's great about this dish is it can be a great snack as well as a great pairing with things like Crab and Dumplings or with some Roti and other chokas etc. However you choose to have this, I do hope you enjoy.
