As a meat eater I would rather not look at this dish as a meat substitute. All it really is, is good food. Thick, well seasoned slices of eggplant with crunchy fried outer coating and a soft delicious inner flesh, I mean, need I say more? This recipe is vegetarian meal that really feels like a guilty pleasure. You can have it with some fries or within a nice sandwich topped off with whatever sauce you desire. Where's the recipe? Here you go. Do enjoy.
1 medium Eggplant sliced
1 tsp Red Pepper Flakes
1/2 tbsp Onion Powder
1 tsp Parsley Flakes
1 tsp Black Pepper
2 tsp Jerk Powder
4 tbsp Vegetable/ Olive Oil
1 tsp Salt
2 cups Flour
1 cup Water
2 tsp Paprika
1 tsp Garlic powder
1 tsp Onion powder
Oil for frying (I used 2 cups)
●To a large bowl add sliced eggplants (you chose how thick you'd like to have the slices)
●Add oil and seasonings and toss well ensuring all slices are well coated.
●Cover and set aside for 15 mins or more to marinate.
●Place one cup of flour to a medium sized bowl and add paprika, garlic powder, onion powder and salt and mix well.
●Add water gradually and whisk well to remove lumps.
●Add the remaining flour to a wide plate or bowl for coating.
●Place a medium sized frying pan on high heat and add oil.
Note: to test oil readiness I use a wooden spoon or the old flour in the pan trick if either sizzles when it touches the oil then it's ready for frying
●Once oil is hot enough for frying take a slice of your eggplant and place it first in your batter and coat well then place it in your flour for further coating and add to oil.
●Let eggplant fry for at least 30 secs on side and flip the cook till it golden brown 4-6 mins. Flip to ensure both sides are even cooked and both sides are golden.
●Remove from oil and place on paper towel. Repeat until all slices and cooked and then my favorite part eat and enjoy.....
