Golden Rosemary and Garlic Chicken

Being a creative foodie means always thinking about the next food adventure. Being a Caribbean foodie means always using green seasonings when preparing meats. I've been actively trying to reach past the Trini norm in an effort to explore new tastes and broaden techniques.
The best food ideas sometimes come while standing in the kitchen with several beautiful cuts of chicken wondering "what the hell do I do with these?" The answer was some dried Rosemary from my herb garden, several cloves of Garlic and enough Tumeric to brighten the darkest of days. Here's my recipe, enjoy........
4 small Chicken Breasts or Thighs skinned
4 Cloves Garlic crushed then minced
1 tbsp dried Rosemary
1/2 tsp Salt
1/4 tsp Cayenne Pepper
1 tbsp Tumeric
1/4 tsp Red Pepper Flakes
3 tbsp Olive Oil
●Wash and clean you chicken with either lime juice and water or vinegar and water. Drain and set aside in a clean bowl.
●Add salt, rosemary, garlic, black pepper, cayenne pepper, red pepper flakes and tumeric to season chicken. Rub into chicken well and set aside for approximately 20mins or more.
●To a wide skillet add oil and let it come to a medium heat before chicken is added. Allow chicken to cook for a 5-6 mins on either side until it takes a beautiful golden color. Add water to saucepan keeping heat on medium cover pot and cook for a further 15-20 mins. Turn at intervals before uncovering and allowing the water to dry down as much as possible.
●Remove from heat and serve hot with desired salads, pasta, rice etc. but most importantly enjoy.
