Kale and Sweet Pepper Salad

With the help of my father, I recently began my first kitchen garden. As a cook, it's a wonderful thing having fresh herbs and veges at your finger tips. I have two beautiful curly kale plants and I have been giving them room to flourish with kind words and a watchful eye. Recently, I was able to harvest a few leaves in order to create this salad. For those who don't know, curly kale is a super green. It's a great antioxidant, an excellent source of vitamin c, can help to lower your cholesterol and reduce your risk of heart disease just to name a few benefits.
Sure we eat for pleasure which is why my focus is always to create meals that taste amazing, but never forget that primarily we eat for nourishment and we must always seek to pay attention to what we choose to put into our bodies and find balance when it comes to food. That being said, let me go ahead and share this lovely salad recipe with you. Do enjoy.

INGREDIENTS
7-8 leaves Curl Kale chopped
1 medium Sweet Pepper julienne
1 small Cucumber seeds removed and diced
4 medium ripe Tomatoes sliced
1 cup Red Cabbage shredded
1 small Green Onion sliced
METHOD
●In a big salad bowl toss ingredients and drizzle with your favorite salad dressing. I used a light store bought tamarind sauce dressing that i tweaked for this one but you can feel free to use whichever dressing you prefer. Most importantly do enjoy.
