Mushrooms and Green Pepper Stuffed Snapper

Soooooooo as much as I adore most types of seafoods fish is decidedly my least favorite thing. I'm blessed however to have a great fresh seafood supplier and he has been walking me through what goes with what and encouraging me to try different things. He brought me two very fresh and beautiful Red Snapper and I decided to stuff it with Mushrooms and Green Peppers *ahhhhhh delish* Its most definitely my pleasure to share this recipe with you and I do hope you enjoy.


2 medium sized Red Snapper

1 Lime

1 tsp Salt

1/4 tsp Cayenne Pepper

1 tbsp Chief Jerk powder

1 tsp Garlic Powder

2 tbsp Fine Thyme Leaves

Pinch Black Pepper



6-7 Baby Bella Mushrooms or 1 tin of Black Mushrooms

1 small Onion

1 small Sweet Pepper

2 cloves Garlic

2 med Pimentos

1/2 cup Breadcrumbs

1 tsp Salt

1 tbsp Olive Oil


●Clean and Mushrooms and chop sweet peppers set aside.

●Crush and chop garlic, chop pimentos and slice onion.

●Add oil to a frying pan or wok on medium heat and saute garlic, onion and pimento for approximately 30 seconds. Add sweet peppers cook for a minute then add mushrooms for another 5 mins cooking on medium heat.

●Add breadcrumbs and stir in for 30 secs or so add salt to taste and remove from heat.

●Using spoon or fork add stuffing to fish. (You can use toothpicks to secure filling inside fish)

**There will be some stuffing left set this aside for later.**

●Place stuffed snappers on a large greased baking tray and bake for 30-40 mins uncovered at 350°

The stuffing that was set aside I tossed a cup of cooked Penne pasta with it as well as a tbsp of olive oil and some salt to taste and will serve my Crispy Skinned Snapper with my Mushroom & Green Pepper Pasta and Roasted Beets and Carrots.
