Oven Jerk Chicken

Jerk chicken is a spicy grilled-meat dish mostly associated with Jamaica but common throughout the Caribbean. This cuisine has its origins with the Taino, who developed the jerk method and later taught it to African slaves, who in turn adapted it in creating jerk chicken. Since most days I don't have time to fire up the grill, the oven has proven to be a worthy substitute. Sure the traditional smoky flavor of grilling is missing, but that wonderful jerk seasoning is still there and still delightful. Here's my recipe.

Ingredients

4 Chicken Quarters 2 tbsp Green Seasoning 1/2 Onion 2 Pimento 1 tsp Salt 1/2 tsp Black Pepper 4 tbsp Chief Jerk Powder Method ●Begin by removing skin off chicken and trimming fat. Wash with vinegar or lime water the drain and set aside in clean bowl. ●Season well with green seasoning and salt then set aside. ●Using small food processor grind pimento and onion and jerk powder to a paste and rub chicken with it ensuring it is well coated. ●Using roasting pan with wire racks or foiled and well greased baking tray and bake in a preheated oven @ 350° for 30 - 40 mins.
