Oven Jerk Chicken

Jerk chicken is a spicy grilled-meat dish mostly associated with Jamaica but common throughout the Caribbean. This cuisine has its origins with the Taino, who developed the jerk method and later taught it to African slaves, who in turn adapted it in creating jerk chicken. Since most days I don't have time to fire up the grill, the oven has proven to be a worthy substitute. Sure the traditional smoky flavor of grilling is missing, but that wonderful jerk seasoning is still there and still delightful. Here's my recipe.
