Pineapple Chicken

Pineapple can easily be my favorite fruit to use in savory dishes. It marries with other ingredients so well and once you balance your portions, it adds great flavor without over powering whatever it is added to. This dish promises juicy mouth watering pieces of chicken that are both sweet and savory with mild spiciness and a huge amount of flavor.

Here's my recipe and I hope you enjoy it.


7 pieces of Chicken Thighs small - medium (or breasts)

3 tbsp Green Seasoning

1/2 tsp Salt

1/2 cup Water

Pineapple Sauce:

2 cups fresh Pineapple cubed (canned is also fine)

1 1/2 cup Water

1/3 cup Brown Sugar

1/4 tsp Cinnamon

1/2 tsp Red Pepper Flakes

1/4 tsp Garlic Powder

2 tsp dried Thyme

2 tsp Corn Starch

3 tsp Dark Soy Sauce

1/4 tsp Salt

pinch Black Pepper


●Clean chicken by trimming fat and skin and then washing using lime/lemon or vinegar water. Drain and place pieces in a clean bowl season with green seasoning and set aside for 20-30 mins to marinate.

●To a medium sauce pan on a high heat add pineapple, brown sugar and 1/2 cup of water and bring to a boil.

●Add garlic powder, cinnamon, red pepper flakes, salt, black pepper,thyme and soy sauce and stir and allow to simmer for a further 5-7 min.

●Stir in corn starch into remaining 1 cup water and whisk into saucepan. Lower heat and allow to simmer and thicken for a further 7-10 mins before removing from heat and setting aside.

●To a wide saucepan or frying pan on medium heat with a thick base add 1/2 cup water and bring to boil. Place pieces of chicken into pan and allow to cook for 3 mins then turn and cover allowing chicken to steam for 15-20 or until cooked through and most of the liquid should be completely gone.

●Pour in pineapple sauce onto steamed chicken and lower heat allow to cook for a further 5 mins turning once or twice to ensure chicken is evenly coated.

●Remove from heat and cover allow to sit for a few mins before serving with the sides of your choice.
