Red Jasmine Fried Rice

When I first stumbled upon this type of Jasmine Rice I was just looking for a healthier rice option and something new to try. It's definitely rich in fiber and nutrients and a great alternative to the regularly used white rice. I decided to create a very simple and clean recipe for this pretty grain so I hope you enjoy. Ingredients 2 cups of red jasmine rice 4 medium cloves garlic 2 stalks celery 6 leaves chocolate basil 1 small carrot 3 cups water 3 tbsps olive oil Salt and black pepper to taste Method ●Place water in saucepan and bring to a boil, rinse jasmine rice in small colander and add to boiling water. ●Cook for 20 mins or until rice is soft in the middle(Be mindful this rice has it's outer husk still intact so it cooks with a bite) ●Drain rice of water and set aside. ●Rinse and chop vegetables, grate garlic. ● Add oil to hot saucepan with a wide base or wok. When the oil is moderately hot toss in vegetables and cook for approximately two mins on low heat. ● Add rice to vegetables, add salt and black pepper gradually and mix till everything is coated evenly. ● Serve this healthy meal with your favorite meats and/or vegetables.
