Saltfish Pancakes with Steamed Spinach and Basil Tomatoes

Pancakes are a staple in my home, often times with some type of fruit mixed in and beautiful golden maple syrup to compliment its light and fluffy texture. Not very often do we find savory ways to enjoy this breakfast dish and it isn't really associated with Caribbean cooking. Which is why I got to thinking. Most foods are really just a flip and a twist away from taking on a whole new identity and this one was no different. I myself was a bit skeptical with this food pairing. However the creative within me must try new ideas when they manifest. As it turns out, it tastes a bit like a lighter version of Saltfish Accra and all the flavors are well married and amazing. If your questions is "really Saltfish pancakes?" The answer is "why yes please." Here's my recipe.
Saltfish after being de-salted and stripped
1/2 cup Saltfish (boiled and stripped) 1 cup Flour 1/2 tsp Salt 2/3 cup Milk 1 Egg 2 tsp Baking Powder 1/4 tsp Onion Powder 1/4 tsp Garlic Powder 1/2 tsp Dried Parsley (Oil or melted butter to grease dish or griddle to cook pancakes) Method ●In a mixing bowl whisk egg then incorporate milk and whisk well. ●Gradually whisk flour into egg and milk mixture then stir in salt and spices and Saltfish pieces. ●Heat griddle or frying pan on medium heat, add oil or butter to cover the base and pour in batter. When the top of the batter begins creating a lot of bubbles flip pancake it should have a golden brown color. When both sides are golden brown in color remove from heat and complete the process with remaining batter. Steamed Spinach
2 cups Local Spinach 2 cloves crushed and chopped garlic 1 small chopped Pimento 2 tbsp Water Salt to taste
Method ●To a medium sized saucepan on medium heat add the water, when it begins to bubble add garlic and pimento and stir for 30secs or until it becomes fragrant. Add spinach and incorporate. Place lid on pan and allow to steam on low heat for 10 mins. ●Spinach should soft and reduced to a fraction of its original size add salt and remove from heat.
4 medium chopped Tomato (remove seeds) 2 tsp fresh chopped Basil 1 clove grated Garlic 1 tsp Olive Oil 1/4 tsp Black Pepper Salt to taste Method ●Add chopped tomatoes to a small mixing bowl, add basil, garlic, olive oil, salt and black pepper and mix. ●Place in refrigerator to chill until it is time to serve.
