Spicy Sweet Potato Wedges

Spicy Sweet Potato Wedges pictured here with Smoked Herring Choka

Sweet potatoes are the guilt free treat of the root crops in my opinion. They're versatile, tasty and great for you. Usually, locally it is prepared simply by boiling and slicing and then eaten with a filling. There are quite a few other easy and delicious ways to prepare them and I'd love to share one of those ways with you. Here's my recipe and I do hope you enjoy.

Ingredients

2 medium Sweet Potatoes (1lb)

2 tbsp Olive Oil

1 tsp Garlic Powder

2 tbsp Paprika

1/4 tsp Cayenne Pepper

1 tsp dried Oregano

1/2 tsp Black Pepper

1/4 tsp Salt

Method

●Peel, wash and dry sweet potatoes and slice into 1/2 inch wedges (or desired thickness).

●In a bowl large enough to mix add all ingredients and mix till potatoes are coated in spices.

●Grease baking tray to comfortably hold potatoes and place potatoes on tray. Place in preheated oven at 350° and bake for 25 mins or until wedges are soft and cooked through.

Serve hot with desired topping as part of a meal or just a yummy snack, however you serve it enjoy.
