Sweet Corn Salsa

Imagine the sweetness of corn married with herby cilantro, spicy chilis and tangy lime. The flavors match the colors with freshness, brightness and it all screams "let my taste buds have a party!" Salsas to me are always such a fun way to spruce up dishes that need that extra kick when it comes to a contrast of flavors, and this salsa does not disappoint.
2 cups canned Sweet Corn 1 tbps fresh Cilantro 1/2 tsp chopped fresh Red Chilli Pepper 1/2 medium Red Onion chopped 2 ripe Tomatoes remove insides and chop
1 small Green Sweet Pepper chopped 1/2 tsp Salt 2 limes 1 tablespoon extra virgin olive oil Method ●Mix all the ingredients and squeeze limes over bowl using a strainer. This can be served immediately but I like setting it on the refrigerator to marinate for a few mins before enjoying it. I hope you enjoy it as well.
