Vegan Chocolate Chip & Cranberry Muffins

On my quest to find dairy free recipes, I have found myself frequenting the vegan section when it comes to my favs, and while from time to time I still consume dairy based products, I find my need to adjust my diet growing stronger. I also happen to love baked breakfast treats of the sugary variety and this muffin recipe was damn near perfect. They were soft and not too sweet with yummy toppings and guilt free pleasure. I am unashamed to say I ate half of the goodies myself. As always, I'm excited to share this recipe with you so here goes. I hope you enjoy.



Ingredients



1 1/4 cup Coconut Milk

Note: most coconut milk products have milk protein in them you can use fresh coconut milk or search for one that does not have (caseinate)


1 tsp Apple Cider Vinegar


2 cups All-Purpose Flour


2 1/2 tsp Baking Powder


1/2 tsp Baking Soda


1/2 tsp Cinnamon Powder


1/2 tsp ground Nutmeg


1/2 tsp Salt


1 cup Brown Sugar


1/4 cup + 2 tbsp Vegetable Oil


2 tsp Vanilla Extract


Vegan mini chocolate chips


chopped Dried Cranberries


Granola (or any toppings you'd like really)



METHOD



●Preheat your oven at 325 degrees and prep muffin tins with paper liners.This recipe makes 12 small muffins.


●Add apple cider vinegar to coconut milk and set aside to "curdle and thicken" for 5 mins until you have a buttermilk like consistency.


●Sift flour into large mixing bowl then add baking powder, baking soda, salt, cinnamon, nutmeg and brown sugar and mix well.


●To coconut milk we now add vanilla extract and vege oil and whisk well before adding it to our flour mixture and stirring well.


●Then using a scoop or a spoon pour batter into tin and top with chocolate chips, cranberries and granola or really whatever topping you like.


●Place in the oven and bake for 25-30 mins or until the skewer inserted into the middle of the muffin comes out dry.


●Once muffins are done remove them from tin and place on a rack to cool, once cooled then go ahead and have a couple and well share if you must lol.
