Watercress and Pecan Salad

It's funny that I never liked this slightly bitter green vegetable as a child because as an adult I think it's pretty awesome. In my book, green equals healthy so I'm all for it but with the right flavors and textures, a nice fresh salad can be a truly beautiful addition to meals or even the central figure. This one is very distinct in flavors: a little tart, citrusy, sweet and salt with the crisp freshness of the greens taking center stage and coupling nicely with the nutty, crunchiness of the pecans. I have peaked your interest right? Okay well here's my recipe let's have a salad.


1bundle Watercress

1/2 cup chopped Pecans


1/4 cup Apple Cider Vinegar

1/4 cup Olive Oil

1 tbsp Orange Zest

1/4 tsp Salt

1 tbsp Brown Sugar

1/2 tsp Garlic Powder

1/4 tsp White Pepper


●Wash and chop or tear watercress and place in large bowl.

●In a jar or bowl with a lid place all other ingredients for the dressing and shake well for 1 min or more until sugar has dissolved.

●You can drizzle dressing on watercress and then top with pecans and toss if you plan to have it right away.

If you're not having salad right away then add pecans and place both dressing and greens in refrigerator and add dressing just as you are about to serve.
