I love eating super-foods but not as much i love creating tasty dishes using super-foods. Let me explain: most super-foods are considered to be bland, boring or difficult to make delicious. It is my belief that with just the right methods and flair you can make almost any food into a masterpiece. Eating black beans as part of a balanced diet can decrease your risk of diabetes, heart disease, and some cancers. Black beans are very high in proteins. In fact, just one cup of cooked black beans has 15 grams of proteins, among other exceptional nutrients. This recipe was pretty simple as is my way but also very delicious as is also my way. Here's the recipe and I hope you enjoy.


2 cups White Rice

4 cups Water

2 cups cooked Black Beans

2 cups Sweet Corn

5 small- medium Tomatoes chopped and seeds removed

3 cloves Garlic grated

1/2 cup Celery stalk chopped

2 tbsp fresh Basil chopped

3 tbsp Turmeric Powder (for color)

2 tbsp Olive Oil

1/2 tsp Black Pepper

Salt to taste


●To a large sauce pan add water and bring to a boil (you can salt your water if you choose i don't.) Wash rice in a small colander and then add to boiling water along with turmeric powder cooking for 10-15 mins or until soft. Strain and set aside.

●To a large frying pan or wok on medium heat add olive oil. Once oil is hot toss in garlic, celery and basil (reserve a bit of the basil to garnish if you so desire) and stir cooking for 30 secs.

●Then toss in beans and corn and allow to cook for approximately 5 mins (toss ever so often.)

●Add chopped tomatoes and cook for a further 5 mins.

●To the pot add the rice and season with salt and black pepper mix well ensuring that everything is well mixed and evenly distributed.

●Remove from the heat and serve with the meats or vegetables of your choosing. However you decide to have this meal i do hope you enjoy.
