Bacon & Egg Fried Rice

When it comes to week night meals, quick is most certainly the word. This meal I threw together with some day old rice, stir fried veges and no additional protein on the side was so delicious. You don't have to take my word for it though, you can try it for yourself. Here's my recipe and I do hope you enjoy. INGREDIENTS 3 cups cooked White or Brown Rice 2 cups chopped Bacon 4 Eggs 1 cup Green Peas 1 med Carrot diced 1 large Onion chopped 3 cloves Garlic finely chopped 1 tbsp. Ginger grated (you can also Ginger Powder) 2 tbsp. Smoked Paprika 1 tsp Black pepper 5 tbsp. Olive Oil 1 tbsp. low Sodium Soy Sauce 1 tsp Sesame Oil Salt to taste Method ●Add 2 tbsp oil to wok or sauce pan and cook bacon for apprx 1-2 mins. ●Remove bacon from pan but leave the fat. ● Lower the heat and cook eggs in bacon fat till creamy. Remove eggs from wok. ●Add remaining oil to wok and raise heat to medium, toss in onions, garlic and cook for 30 secs or until fragrant. ●Add carrots and peas and sauté for 3 mins. ●Add the soy sauce and sesame oil and stir. ●Then add your rice, bacon, eggs, paprika, black pepper and salt and mix well. Serve hot with the sides or your choice and if you're anything like me and you like your food wet feel free to top with soy sauce or any sauce of your choosing.
