Bhaji

Dasheen Bush is definitely a favorite with Caribbean cooking. Callaloo, Trini Oil down, Bhaji pies, steamed bhaji and coconut milk you name it, it's all very delicious. This is one of the simplest ways to cook it and it's still great. All you really need are a few ingredients, some nice fresh and healthy leaves and you're good to go. Here's my recipe using Dasheen Bush or Dasheen leaves for Bhaji. Ingredients I bundle Dasheen Bush 4 Cloves Garlic 1 small Pimento 2 tbsp Oil. 1/4 cup Water 1/4 salt or to taste 1 piece Pepper to taste Method

●Wash and chop dasheen bush leaves, I also wash chopped stems as well.

●Crush and chop garlic and chop pimento and hot pepper. Add oil to Saucepan on medium heat.

●Saute garlic, pepper and pimento for a few secs and then toss in dasheen bush mix and add water and cover pan and allow to steam for 10 mins.

●Remove lid and using the back of your spoon begin mashing the bush to create a smoother texture. If the bush is a bit tougher it may need a few more mins of steaming feel free to add water as you go along.

●Once cooked through, soft and mashed add salt and take of heat. Serve alongside your desired dish but most importantly enjoy.
