Crispy Fried Snapper

Of course when you live on an island, seafood is a diet staple with many ways to prepare it and lots of options to choose from. I've never been a big lover of fish, that is until my seafood supplier began suggesting different types of fish for me to try in different ways and I wholeheartedly fell in love. I'd say my favorite fish is most definitely red Snapper and while there are many ways to prepare this, fried is most definitely my go to method. Who doesn't love crispy skin, moist flesh and depths of flavor through and through? Here's my recipe and as usual I do hope you enjoy. INGREDIENTS 4-5 medium sized Snapper Clean and wash with lime or lemon water 5 tbsps Green Seasoning 1 tbsp dried Thyme 1/8 tsp Red Pepper Flakes 1/4 tsp Black Pepper 1 tsp Salt Oil for shallow frying Flour for dusting 1 cup All Purpose Flour 3 tbsp Corn Starch (optional) 1 tbsp Paprika 1 tbsp Ginger Powder 1 tsp Cayenne Pepper 2 tsp Garlic Powder 2 tsp Onion Powder 1 Tsp Black Pepper 1/2 tsp Salt METHOD ●Make three slits using sharp knife in both side of all your fishes. ●Place the cleaned and washed dishes into a mixing bowl and add green seasoning, thyme, pepper flakes, salt and black pepper. ●Rub seasonings well into fish, cover and set aside. ●Place oil in skillet or frying pan set ok medium heat. ●Place flour in a wide bowl or saucer and add all the rest of the ingredients to flour and mix well. ●Test the readiness of your oil and once it is hot enough ..... (I test it's readiness by either place the bottom of a wooden spoon in the pot if it begins forming bubbles around the spoon you oil is hot enough.) .....start dipping your fish in the flour ensuring it is well coated. Shake off excess flour before placing into the oil. ●Allow fish to cook on one side for 3-4 mins until golden brown the flip and allow to cook on the other side for the same amount of time or until it is golden. ●Once both sides of the fish have cooked for adequate amount of time and are golden on both sides you remove it from the oil and place on paper towels. ●Repeat until all the fish have been fried and then serve hot with desired sides or sauces.
