Curried Goat

Goat meat is one of those meats that don't only taste great but it's also pretty great for you. It's a very lean meat so the fat content is limited, it's also quite high in proteins but low in calories and cholesterol which means nutritionally it is a great meat option. Curry goat is the most popular way we prepare goat locally and once you get your flavors right you'll quite possibly end up licking your fingers after eating it. I had a severe craving recently so I went out and got myself some to cook and the best part of it all is I now get to share my recipe with you. INGREDIENTS 4 lbs Goat Stew (cubed) 5 tbsp Green Seasoning 4 tbsp Olive Oil 2 tsp Geera Powder 5 tbsp Curry Powder 2 cups Coconut Milk 2 cloves Garlic crushed and chopped 4-5 chopped Chadon Beni leaves 2 Pimento chopped 1/2 tsp Salt or more to taste Hot pepper to taste METHOD ●Add goat to a large bowl and wash with water and lime/lemon to clean. ●Drain all the liquid place cleaned goat in another bowl to season. Add green seasoning,salt and geera to goat and mix well and set aside to marinate from 30-mins till. ●To a large saucepan on high heat add oil, let warm up for a few secs before stirring in curry powder. ●Curry should begin bubbling almost immediately we then add crushed garlic and hot pepper and stir and quickly follow with seasoned goat. ●Stir the goat well and quickly to ensure curry is well incorporated then add in your coconut milk and again mix. ●Cover goat with some water and allow to come to boil. When liquid comes to a boil lower heat and allow to simmer for 1 1/2 hours stirring at 20 min intervals. Note : if all the liquid evaporates before the meat is tender add more gradually until it is soft and finished cooking. ●Once the meat is soft and 2/3 of liquid reduced add pimento, bandania and more salt and hot pepper if necessary let simmer for a further 2 mins turn off heat and serve hot.
