Eggplant Pizza

Eggplant Pizza....Not a new invention by any means but I always wondered why not have a full base of eggplant *crust* as opposed to little slices topped with pizza toppings. Well thanks to Sou chef bae and his Keto diet atm, I'm thinking up ways to make non regular meals yummy and inviting. So I finally embarked on the course of full eggplant crust large pizza and it.....was.....yummy. Even my nitpicky daughter approved and as usual that says a lot. I decided to make one simple change to this pizza and it's only because I was pressed for time; I did not make the sauce like I usually do with the fresh garlic and the basil. I opted instead to add everything atop my pizza and the results were just fine. So I know you'll miss the yumminess of that pizza dough but I promise this will ring a lot of your bells. Here's my recipe. INGREDIENTS 2 med - large Eggplants 1/2 lb Minced beef (seasoned and precooked) 2 cups grated Cheese 2 cups Tomato Paste 2 tbsps Italian Seasoning 3 cloves grated Garlic 1 large Tomato sliced 1 small Onion sliced 1 tsp Red pepper Flakes 1 tsp Salt 1/2 tsp Black Pepper 1/4 cup fresh Basil chopped METHOD ●Grease large pizza pan with Olive Oil. ●Wash, peel and slice eggplants to 1/4 inch in thickness lengthwise. ●Place slices on greased tray and flatten a bit using your hands. ●Sprinkle salt and black pepper over eggplant and then spread sauce using the back of a spoon. ●Spread Italian Seasoning, grater garlic and red pepper flakes atop sauce and the drizzle generously with grated cheese ●Top with tomatoes, onions and minced beef and place in oven. ●Bake for 15 and serve hot.
