FRIED CHICKEN

Fried Chicken needs absolutely no introduction so please bare with me while I try to come up with spiffy pieces of info regarding this dish. Everyone has a different method to their fried chicken. I myself have several and still I try to come up with different methods ever so often. This is one of my simpler methods, just a nice dusting of flour, ample spices and well seasoned pieces of chicken, fried to golden perfection. Here's my recipe, do hope you enjoy. INGREDIENTS 1 whole chicken cut into 8 pieces 3 tbsp Green Seasoning https://www.terisfoodtherapy.com/post/green-seasoning 2 cups All Purpose Flour 1 tbsp Garlic Powder 1 tbsp Onion Powder 1 tbsp Turmeric Powder 1 tbsp Red Pepper Flakes 1 tbsp Smoked Paprika (reg Paprika can be used as well) 1 tsp Black Pepper 1 tsp Cayenne Pepper 2 tsp Jerk Powder 1 tsp Mustard Powder 1/2 Cumin Powder 2 1/2 Salt Vegetable Oil for Deep Frying METHOD ●Place vegetable oil in a deep frying pan on medium heat while you prepare chicken. ●Trim chicken fat and wash in lime or vinegar water pat dry and place in bowl to season. Season with green seasoning, 2 tbsp salt, red pepper flakes and black pepper. Mix well and set aside to marinate for approximately 2 hrs. (if you are pressed for time take a small knife and punch hole in the fleshier parts of your chicken and marinate for 20-30mins) ●Place flour in a wide mixing bowl and add spices as well as remaining 1/2 tsp of salt and mix well with spoon or hands. ●Using wooden spoon place in oil if it begins to bubble the oil is hot enough if the oil is smoking it is too hot lower heat until it cools a bit and stops smoking. ●Coat the chicken generously in flour shaking of loose bits of flour before placing the chicken in the oil and deep fry each piece for 12-15 mins until golden brown. ●Remove cooked pieces from oil and place on paper towels or grease proof paper to absorb oil and serve hot.
