Fried Mushrooms

I am most definitely a fan of the shrooms. I love mushrooms done in almost everyway, and I use them oftentimes as a meat substitute. It's variety, flesh texture, ability to absorb flavors etc. makes it a non-meat eaters staple, but when done right as a meat substitute, it can be delicious for everyone truly. This recipe is 100% vegan and promises hot and crunchy fried mushrooms on the outside but also soft, juicy and well seasoned mouthfuls of goodness on the inside. I made some of these babies recently with my vegan rolls and gave them out as samples to friends who are very much meat eaters and the general consensus was "this is very delicious." If somehow you don't believe me, how about you try them yourself. Here's the recipe. INGRIEDIENTS 4 large Portabella Mushrooms (washed and dried) 2 tbsp. Green Seasoning 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Smoked Paprika 1/4 Chili Flakes 1 tsp Salt pinch Black Pepper Vegetable Oil for deep frying BATTER 1 1/2 cup Flour 1 1/2 cup Water 1/4 tsp Cayenne Pepper 1/8 tsp Paprika 1/4 tsp Garlic Powder 1 cup Flour METHOD ●Place washed and dried mushrooms with stem removed in a large bowl, you can choose to prep and fry the babies whole if your aim is to use in a large sandwich or you can slice and dice them in whatever way you choose. ●Season mushrooms with green seasoning, garlic powder, onion powder, paprika, salt, black pepper and chili flakes. rub in well but gently. Set aside to marinate. ●Place oil in a frying pan on a high heat. ●While oil is getting hot place in mixing bowl 1/2 cups flour to that add cayenne pepper, paprika, garlic powder and salt and mix. ●Whisk into flour water gradually until properly incorporated with no lumps (you do not have to add all the water you choose the desired texture of your batter. A runny batter however gives a light coating and a better crunch) ●Add remaining cup of flour to a plate or dish for dusting. ●Once oil is hot enough for frying but not too hot (smoking oil is an indication oil is too hot) you can test the oils readiness by (using wooden spoon in oil if it bubbles it is ready or testing a small bit of flour if it sizzles it is also ready) ●Once oil is hot you take you mushroom dip it in the batter ensure that it well coated, the dip in flour and coat as well and place in the pan with oil. ●Allow to fry for 30-40 secs before turning and allowing to fry on the other side. Fry on both sides until golden brown, mushrooms don't take very long to cook through so we are relying on the color of the outer coating to say when they are done. ●Remove from pan and place on napkins to remove excess oil. Once you are through frying all your mushrooms you can serve these hot with whatever sauces, sides or toppings you like. The most important part of all of this is that you ENJOY!
