Fry Aloo Choka (Fried Potato)

Alu means potato in Hindi/Urdu and also Farsi and other related languages which of course explains why many Indo Trinis and none Indo Trinis refer to this or any East Indian dish containing potatoes as Aloo. I think we can all agree potatoes are delightful, starchy little root crops that can be prepared in so many ways that it's definitely a food staple. Here's my recipe for my delicious Aloo Choka I sure hope you enjoy. Ingredients 6 -8 medium (peeled and cubed) Potatoes 5 cloves crushed Garlic 1 small Onion 5 leaves Bandania (Chadon Beni) 1 medium Pimento pepper 4 tbsp. Oil 1 – 2 tsp. Salt 1 piece hot pepper (to taste) 1/4 cup Water


Method

●Add Oil to frying pan or wide based heavy saucepan on high heat. Add crushed and chopped garlic and Onion and saute for a few secs until onion becomes translucent.

●Add potatoes to pot and mix, add water and the lower heat and cover for 15 mins or until potato start to become soft. (Feel free to add a little water here and there until your potatoes become soft)

●As the potatoes continue to cook the will begin to slightly burn and stick to the base of the pan and this is welcome. Add your chopped pimento, bandania, salt and hot pepper and mix in a way that you scrape the burnt bits off of the bottom of your pan mixing it all together and then turn off heat and serve hot with your favorite roti and do enjoy.
