Fudgy Brownie

Tomorrow is theee day V-Day and I've chosen to celebrate Brownie Style. I've never met someone who didnt like a good brownie. Chewy, chocolatey, gooey deliciousness. I took the privilege of adding some award winning good old Trinibago Chocolate and some local Honey Roasted Peanuts were added to the mix. All in all I'd say the brownies were the perfect way to kick off my Valentine's. Ingredients 1 cup unsalted butter or margarine (melted and cooled)

2 tablespoons vegetable oil

2 cups packed light brown sugar

4 large eggs, at room temperature

1 tablespoon vanilla essence

3/4 teaspoon salt

1 cup all purpose flour

1 cup unsweetened cocoa powder

1 cup roughly chopped chocolate or large chocolate chips
(((*I used local Trini chocolates Cocoa Republic Malted and Dark Chocolate Bars))))

Method ● Preheat oven to 175°C | 350°F.


●Lightly grease an 8x12-inch baking pan or muffin tins with cooking oil spray.

●Combine melted butter, oil and sugar together in a mixing bowl . Add the eggs and vanilla, beat mixing well.

●Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).

●Fold in 3/4 of the chocolate pieces.
Pour batter into prepared pan.

●Bake for 20-25 minutes for just under-done brownies (fudgier texture) or until the centre of the brownies no longer jiggles and is JUST set to the touch.
OR 30-35minutes if you like your brownies well set use toothpick test for this.

I frosted my brownies with chocolate frosting and then topped with honey roasted peanuts but you can eat yours straight away and enjoy or play around with your favorite toppings. Whatever your choice do enjoy.
