Saltfish Pancakes with Steamed Spinach and Basil Tomatoes
Pancakes are a staple in my home, often times with some type of fruit mixed in and beautiful golden maple syrup to compliment its light and fluffy texture. Not very often do we find savory ways to enjoy this breakfast dish and it isn't really associated with Caribbean cooking. Which is why I got to thinking. Most foods are really just a flip and a twist away from taking on a whole new identity and this one was no different. I myself was a bit skeptical with this food pairing. However the creative within me must try new ideas when they manifest. As it turns out, it tastes a bit like a lighter version of Saltfish Accra and all the flavors are well married and amazing. If your questions is "really Saltfish pancakes?" The answer is "why yes please." Here's my recipe. Saltfish after being de-salted and stripped Ingredients 1/2 cup Saltfish (boiled and stripped)
