Smoky Vege Fried Rice

Rice is another relatively blank canvas I love working with. It's a staple in any home if you're eating healthy or not. It's great as a main dish, side dish, dessert etc and my favorite part is that it's usually very easy to throw together a good rice dish. My love of foods that give you that smoked, tangy vibes led me to this recipe and I chose to pair it with Lamb and Mango chutney, so delicious. If you love crunchy veges and beautiful flavor then try this recipe, you won't be disappointed. INGREDIENTS ● 3 cups White Rice ●3 tbps Olive Oil ● 1 large Red Sweet Pepper ●1 cup chopped Green Beans ● 1 small Carrot finely chopped ●1 cup Sweet Corn ●3 cloves Garlic finely chopped ●1 small Green Onion chopped ●1/2 cup chopped Celery Stalk ●1tbsp dried Parsley ●1 tsp Tumeric ●2 tsp Smoked Paprika ●Pinch Black Pepper ●Salt to taste METHOD ●Wash rice, place in boiling water and cook for 15-20 mins or until rice has softened. Drain and set aside. ●To large frying pan on medium heat add oil and allow to heat up for a few sec. ●To oil add garlic and onions and saute until onion begins to become translucent, add remaining veges and saute for 7-10 mins on medium heat cooking slightly. ●Once green beans have begun cooking but are still slightly crunchy add your rice to your frying pan along with the tumeric, paprika, parsley and black pepper and desired amount of salt and toss well. ●Once all the rice is properly coated and veges mixed in you can remove from heat and serve with your favorite meats and or veges. Most importantly enjoy Thanks for joining another session of Food Therapy. See you soon ❤
