Stewed Chicken

One of the most common ways to prepare meat locally is by stewing. Stewing is a method we use in the Caribbean at large to cook meats and some vegetables. This is done by caramelizing brown sugar until it goes past its light caramel color to a slightly darker shade of brown. The main ingredient is then added and allowed to cook, taking the color of the browned sugar and creating a stew. It is simple and delishhhhhhhhh. We stew chicken, beef, pork, turkey, goat, potatoes and, one of everyone's faves,we cook a beautiful rice dish by using this method as well (see Pelau). Sunday lunch or any day of the week is a good day for stew so here's my recipe and I do hope you enjoy. INGREDIENTS 1 Chicken (5-6lbs) cut up into small pieces 6 tbsp Green Seasoning https://www.terisfoodtherapy.com/post/green-seasoning 1/4 tsp Black Pepper 1 tsp Salt 2 tbps Brown Sugar 2 chopped Pimento 1 small Onion chopped 1 crushed and chopped clove Garlic 2 cups Water Hot Pepper and Salt to taste METHOD ●Place chicken in large bowl of water with either vinegar or lime, clean by removing skin from chicken pieces. ● Drain and place in a medium to large bowl add green seasoning, black pepper and salt, mix well. Set aside for 30 mins to marinate. ●To a medium saucepan on high heat add brown sugar and allow to liquefy. As brown sugar begins to liquefy begin stirring it slowly until the color becomes caramel and frothy. ●When the sugar becomes slightly dark brown in color toss in chicken and stir. Allow chicken to absorb color for 1 min then add water and again stir. ●Cover chicken and allow to cook on medium heat for 15 - 20 mins. ●Once all the chicken pieces are a nice brown color remove lid and and add hot pepper, pimento, onion and garlic. Let simmer until water has reduced to about 1/2 the original amount. ●Complete cooking by adding salt to taste the turn off heat and serve hot. Stew is one of the Caribbeans finest. Simple and bursting with flavor and a regular on any menu. Serve with rice, roti, pies you name it. However you choose to have this I do hope you enjoy.
