Tomato and Onion Rice 

This isn't your traditional Caribbean type food. In fact I believe there's a Portuguese variation of this particular rice dish as well as an Indian variation. Nevertheless I thought it would be a great flavor accompaniment to my Cajun Chicken and since there's nothing new under the sun I found some great recipes and created my own. Here's my (Tomato and Onion cook up) recipe enjoy. Ingredients 3-4 medium Tomatoes 3 tbps Tomatoe Paste 3 cups Vegetable Stock 1 small Onion 3 cloves Garlic I tbsp chopped Basil 2 1/2 cups White Rice 2 tbsp Olive Oil Salt and pepper to taste Method ● Chop tomatoes, onions and garlic. ●Add olive oil to wide based saucepan and saute vegetables starting with the onions and garlic stirring for a few seconds or until onions look translucent. ●Add tomatoes and cook for 1 min. ● Add rice, basil and tomato paste and incorporate well. Then add your stock and stir. ●When mixture begins to bubble add salt and pepper stir it in then lower heat a bit and cover your pot. ●Let the rice simmer for 15-20 mins but feel free to add more water if necessary until rice is soft but firm and the mixture has a creamy texture like that of a risotto. ●Once rice has softened and adequate liquid has dried up turn off stove and serve immediately with choice meats and veggies.
