My Vegetable Orzo here pictured with Oven Jerk Chicken and Apple and Cabbage Coleslaw. My great love for pasta extends into all realms, even rice shaped little bites of deliciousness. Orzo, also known as Risoni, is a type of rice shaped pasta and can be prepared in many many ways. The most common way is to saute with veges in some type of stock, giving a creamy and light finish. I tried a slightly different approach that closely resembles a Trini style fried rice. Here's my recipe and I hope you do enjoy. Ingredients 2 cups cooked Orzo Pasta
1 cup Pigeon Peas
1/2 cup Sweet Corn
4 cloves crushed and chopped Garlic
1 chopped Pimento
4 tsp fresh chopped Basil
1 tsp Salt
1/2 tsp White Pepper
2 tbsp Olive Oil Method ●In frying pan or wok add olive oil and let it heat up on a medium heat.
●Add garlic, pimento and basil and mix for 30 secs until really fragrant. Add pigeon peas and sweet corn and let cook for 4-5 mins.
●Toss in Orzo add salt and pepper and mix until thoroughly incorporated. Remove from the heat and serve hot.
